If you’re planning on doing some grilling this Memorial Day, we have the perfect accompaniment for you. Sure, you can serve your family burgers and hot dogs on traditional buns. But, what fun is that? Do something different this year and serve your best grilled meats on these little gems; Pretzel Slider Rolls! Better yet, they’re not that difficult to whip up in your own kitchen.
If you’ve already checked out our Mickey Pretzels Recipe, these ingredients should seem familiar. As a matter of fact, the components for our Pretzel Slider Rolls are, almost, exactly the same. It’s the same with most of the cooking steps. The only real difference is the shape.
I did make one change in this from the Mickey shaped treats I discussed before. Since these are more of a bread-type dish, requiring a little more body, I substituted Bread Flour. However, All-Purpose Flour will work just fine.
Also, you won’t really need the Pretzel Salt for this Disney Dish. You can use it to top your rolls, if you like. However, you don’t need the giant chunks of Salt on these. So, Kosher or Sea Salt will work just fine.
Our Pretzel Slider Rolls are a yeast bread, at heart. So, that means we’ll need to “activate” the yeast first to get it going. We’ve talked about this in the past but, just in case you haven’t explored those Disney Dishes a this point, we’ll discuss it again.
Start by adding the Yeast, Warm Water, Sugar and Salt to a small bowl or large measuring cup. Stir to combine and let set for about 5 minutes. The mixture will gradually begin to bubble, or “bloom”, like in the photo above. Once it does this, it’s awake and ready to go!
Next, add the Flour and Melted Butter to an electric mixer. Pour in the “bloomed” Yeast liquid and mix on low until combined using the dough hook feature. Once the mixture comes together, change the speed to medium and knead the dough for about 4 to 5 minutes. The result should be a smooth dough that looks similar to the picture above.
Once your dough is ready to go, place it in a lightly oiled bowl. Cover with plastic wrap and set in a warm place until the dough has approximately doubled in size; about 50 to 55 minutes.
Once your dough has risen, it’s time to portion it out for the next step. To do this, you’ll want to flatten the dough, slightly, and cut it into approximately 16 equal sized segments.
Roll each of those portions into balls and place on a baking sheet covered with parchment paper. Cover with plastic wrap, set in a warm place and allow to rise for about another 30 minutes.
Well, that’s a great question. It’s the next step. For a traditional “yeast-bread”, you’d pretty much just go ahead and bake them from here. However, to “Pretzel-ize” these rolls, you’ll need to add this extra stage to the process.
Add the Water and Baking Soda to a large pan and ring the mixture to a rolling boil. The Baking Soda will cause it to fizz significantly.
Next, place a silicon baking mat or parchment paper on a baking sheet. Coat with a liberal amount of oil or cooking spray.
Add the roll portions, about 4 at a time, to the Baking Soda Water “Jacuzzi” and boil for about a minute. Remove and place on the prepared baking sheets.
Next you’ll want to use a sharp knife to cut an “x” into the top of each of the rolls. This helps them expand slightly as they’re baking. Let’s be honest, though. It makes them look really cool! That should be reason enough!
Time now to give our rolls a little shine. Add the Egg and a little Water to a small bowl and beat until well combined. Brush the top of each roll lightly then sprinkle with a little Kosher or Sea Salt.
Finally, it’s time to get these puppies baking! Place the baking sheets in an oven preheated to 425ºF. For our Pretzel Slider Rolls, you’ll want to cook them for about 14 to 17 minutes, rotating them midway through the baking time to help them cook evenly.
You’ll know they’re fully baked when they’re golden brown, like in the photo above, and give off a hollow sound if you tap them on the bottom. Cool completely and reserve until ready to use.
You won’t find many better rolls than these. Our Pretzel Slider Rolls have an amazing, crispy, crust but are soft and wonderful in the center. Plus, you get that fantastic soft pretzel flavor with every bite.
They’re prefect for burgers or sandwiches. However, you won’t go wrong just enjoying them as they are.
