This week, we’re headed back to the Disneyland Resort for our next edition of “Pumpkin Spice Season” recipes. It also just happens to come from one of our favorite dining spots at Disneyland Park; the Jolly Holiday Bakery Café. If you’ve never been there, it has delicious sandwiches, soups and salads. As the name would suggest, it also has great seasonal baked goods. That includes today’s Disney Dish. The Pumpkin Muffins from Jolly Holiday Bakery Café.
Enough chatting. Let’s get to this supercalifragilisticexpialidocious treat.
This recipe for the Pumpkin Muffins from Jolly Holiday Bakery Café consists of, mostly, simple components but there are a fair amount of them. If helps make sure these small packages pack a flavorful punch.
Also, this will be the first recipe we’ll be creating that requires flour that isn’t all-purpose. For this, we’ll need both Cake Flour and Bread Flour. Now, if you don’t have those or want to purchase both, you can substitute AP flour. This is especially the case for the Bread Flour. However, I’d suggest you avoid swapping, if at all possible. That’s because they work together to help ensure your Pumpkin Muffins are light and fluffy but also have the body you’d expect.
Now, the last thing we want for our Pumpkin Muffins is a lumpy batter. So that means we need to get those out right at the start. So we’ll begin by sifting the Cake Flour, Bread Flour, Baking Soda, Cinnamon, and Nutmeg into a large bowl.
Next, add the Eggs and Granulated Sugar to the bowl of an electric mixer and beat together until well combined and the mixture is rather pale yellow in color.
Add the Pumpkin Purée and Vegetable Oil to the Egg and Sugar mixture and beat, again, until smooth and well combined.
Now it’s time to gradually fold in the Flour Mixture. Add about half of it to the Egg Mixture and fold in until just combined. Stir in the Golden Raisins then fold in the rest of the Flour until the batter just comes together. Try your best not to over mix the batter. Doing so could affect the lightness of the finish muffins.
Once our Pumpkin Muffin batter is complete, it time to put together the part of this Disney Dish that really helps set it apart; the Streusel Topping.
Begin by adding the All-Purpose Flour, Granulated Sugar, Dark Brown Sugar, Cinnamon and Salt to a medium-sized bowl. Next, add the chilled Butter and work all the ingredients together with a fork. Eventually, the ingredients will be combined and begin to resemble bread crumbs. If they look similar to the photo above, your Streusel Topping is ready to go!
Now it’s time to get our Pumpkin Muffins all baked and ready to enjoy. Start by preheating your oven to 375ºF.
Next, place paper liners into each slot of a muffin pan.
Spoon the batter into each cup of your muffin pan until they’re about 3/4 of the way full.
Once all the liners have all been filled, it’s time to add the Streusel Topping. Sprinkle about a teaspoon of the topping onto the muffin batter until mostly covered. (This is the good stuff, so don’t scrimp on it)
Place in the pan your oven and bake for about 18 minutes at 375ºF. Then, lower the heat to 325ºF and bake for another 5 minutes or until the Pumpkin Muffins are nice and golden brown.
Place on a baking rack to cool slightly then serve warm or, once completely cooled, store in an air-tight container until service.
These Pumpkin Muffins from Jolly Holiday Bakery Café are a perfect side dish for this “Pumpkin Spice Season”. The muffins, themselves, are light and fluffy. They have the rich pumpkin flavor you’d expect balanced with the spice from the cinnamon and nutmeg.
What really makes these muffins pop, though, is the streusel topping. It crisps up nicely to add a necessary, crunchy, texture change with the perfect amount of sweetness from the brown sugar and, even more, spice from the cinnamon.
It’s a perfect side dish at with a nice cup of coffee or tea for breakfast. It would also easily work as a phenomenal dessert.
